When I was planning my posts for this month, I thought I’d totally be in the mood for a yummy ice-cold popsicle!
Well…I was photographing this outside in a big sweater & boots! Not something you’d imagine in May!
It’s been a little chilly here. Hopefully you’re experiencing sunshine & warm temps!
During the summer months, I crave anything cold & fruity. One of my favorite things to do is make homemade popsicles. These are super easy. They make a perfect after school snack and they’re healthy!
Here’s what you’ll need:
Fruit of Choice
Sugar (or sweetener of choice)
Popsicle Sticks (mainly if you’re using a paper cup…or you could use a spoon in place of the stick)
Start by juicing or blending your fruit of choice. I chose honeydew & watermelon.
You can blend it, if you don’t have a juicer. It will just be a little thicker.
In regards to how much juice you’ll need, it took around 1/2 cup to fill up one of my popsicle slots in the mold.
Next, heat some water to where it’s boiling. You’ll add 1/2 cup sweetened water mixture to 1 cup juice, so let that help determine how much water to boil.
Once the water is hot enough, stir in 2 tablespoons of sugar per 1 cup of water until dissolved.
You DO NOT have to add sugar. Obviously, it will be healthier if you didn’t. My fruit was just not very juicy or sweet so it certainly needed a little help. You can add agave syrup or sugar substitute also.
Now add your sweetened water to the fruit juice.
Add 1/2 cup sweetened water to 1 cup fruit juice.
Pour the juice into your popsicle mold and insert the top part…or you can use popsicle sticks.
Even though I have a mold, I wanted to show you how you can keep the popsicle sticks upright by using regular tape.
Just lay two strips of tape across your cup/container, in either direction, to allow the popsicle stick to stay put.
Now you’ve got your refreshing, healthy (besides the sugar ;p) homemade popsicles!
Experiment with lots of combinations -
Strawberry + Lime
Coconut Milk + Pineapple Juice
Grapefruit + Orange
Even try adding herbs -
Mint + Lime
Lemon + Rosemary
(You definitely should add a sweetener to the last two)
